The Cook School of Business at Columbia International University is instrumental in helping an entrepreneur bring his strudel restaurant to downtown Columbia.

The Strudel Shop is owned by Kevin Kelly who moved his thriving business from Charlotte to Columbia at the urging of Scott Adams, dean of the Cook School of Business.

“We started talking about Columbia and so he came down … and met with our entrepreneurial group and our kids and talked to us about his vision,” Adams told The Free Times newspaper.

In addition, CIU will provide the Strudel Shop with interns who will learn to bake and operate a restaurant under Kelly.
